We are thrilled to announced that Sebastian & Co Fine Organic Meats is the winner of our “We Heart Local BC Food & Drink” Contest.

Sebastian, Jessica and all the staff at this old-world meets modern-day butcher shop worked very hard to win the Grand Prize valued at more than $12,000. Located in Dundarave, West Vancouver, Sebastian & Co specializes in dry-aged beef (they were the first to offer 40 day, dry-aged beef to Vancouver), exotic game meats, hand-made sausages and house-cured charcuterie as well as a wide variety of cheeses, tapenades and other culinary goodies.

Chef turned butcher, Sebastian, likes to purchase meat directly from farmers when possible and he’s picky – one of his pork farmers plays the accordion to his pigs! Sebastian buys the whole animal, breaks it down on-site and prepares the steaks, roasts, racks, bacon and sausages that keep customers from West Van, and as far away as Singapore, coming back.

Sebastian & Co is carnivore heaven. According to Jessica “while dry-aging results in the most tender, delicious steaks many butchers don’t do it because it’s expensive. As the meat dries, it shrinks and weighs less. It can shrink up to 1% per day of dry-aging and we dry-age up to 40 days!”

Curious, we asked what’s the best way to cook a dry-aged steak? Sebastian says “good quality meat means you can keep it simple.  Just sprinkle with a good quality salt, coat a cast iron pan with a small amount of canola oil and heat on high on the stove, sear the steak on all sides and finish in a 300 degree oven for 10 – 15 minutes.”  That’s it!  All the hard work was done by Sebastian and his team during the previous 40 days.

In addition to to the dry-aged beef, we can’t wait to try the housemade smoked bacon, the house breakfast pork sausage, the pork duck and wild mushroom terrine and there’s a rillette we have our eyes on.

We have also selected the Voters’ Prize winners, Charlotte & Clive Braude of Vancouver, who won a Cornucopia Weekend in Whistler. This $600 prize package, generously provided by our friends at Cornucopia, includes two tickets to Cornucopia’s flagship wine tasting event CRUSH and a two night stay at the beautiful Fairmont Chateau Whistler.
